Larry Kolar

Executive Chef Larry Kolar has been associated with high-level New York restaurants for over two decades. In that time he has developed a reputation as a chameleon, who can provide astounding food in literally any format. His culinary voice ranges from Mediterranean, Asian, American, Moroccan and South American cuisines.

The concept of On the Forks Catering was designed to represent what Larry feels he does best; represent authentic, clean flavors with the use of seasonal and local ingredients.

Larry's time at the legendary Quilted Giraffe helped to shape what Asian-French influenced food meant to the world. As the Sous Chef at the Quilted Giraffe, Larry was responsible for creating all of the tasting menus for every table in the restaurant. This was no small task given that the same two dishes could not go to any table.

Larry also spent time as the Executive Chef of the Hospitality Inc. Group, which included the Tapas Lounge, Eros and Casa La Femme. He successfully represented Greek, Moroccan and Spanish cuisines at the same time.

As the Chef de Cuisine at the Sign of the Dove, Larry started his relationship with the Santo Family Group. For two of the brightest years in the Dove's 35-year history, Larry offered superior American food while cooking for a high volume restaurant.

Larry received high acclaim as the Chef of Bolivar. Since its monumental opening in October 1998, the press has been very quick to recognize Larry's talents. To quote Ruth Reichel's review from the New York Times "I love the food at Bolivar." Larry truly brought traditional South American cuisine to New York as no restaurateur had done before him at this level of dining. At Bolivar he focused on Peru with influences from the rest of the continent.

Larry then teamed up with Matthew Kenney as Executive Chef of Kenney's Commune and Commissary restaurants, strengthening his Contemporary American background. Here he focused on clean healthful cuisine.

Kolar's last tour of duty was at the highly celebrated Camino Sur restaurant where he focused once again on South America. This time the spotlight was on Colombia with influences from the rest of the continent.
